Cool Gazpacho

4 cups tomato juice

1/3 cup olive oil
1/3 cup red wine vinegar
1/4 teaspoon salt
1/3 teaspoon sugar
1 garlic clove, pressed
1 medium cucumber, peeled & finely chopped
1 medium onion, peeled & finely chopped
1/2 green pepper, finely chopped
1 rib celery, finely chopped
6 green olives, chopped
Combine first six ingredients in a blender and blend well. Pour into large bowl. Add all chopped vegetables and stir. Chill. Serves 6.
