Cedar House Inn's Ham and Cheese Souffle
With a Dijon Bechamel Sauce Dusted with Smoked Paprika (Serves 6)
Ingredients:
12 Large Eggs
4 Egg Whites
12 Ounces of diced thin deli ham
1 ½ Cup of homemade salsa (store bought works well too!)
1 Cup of homemade or good quality store bought pimento cheese spread
2 Cups of Cheddar Jack Cheese (save a little for garnish)
¾ Cup of Whole Milk
A pinch of Salt and pepper
Smoked Paprika
1 package of Simply Potatoes (Steak House Seasoned) Prepared according to the package
Instructions:
Pre-Heat the Oven to 325'
Spray the bottoms of six 4" ramekins with cooking spray
Sprinkle the bottom of each ramekin with shredded cheddar cheese
Divid the ham into 6 servings and place on the cheese
Top the ham with ¼ cup of salsa
Mix together 12 eggs, pimento cheese, milk and a pinch of salt and pepper
Whisk the 4 egg whites until they form stiff peaks
Gently fold the whites into the egg mixture
Ladle the egg mixture into the ramekins until they are full
Place the ramekins on a baking tray and add enough water to cover the bottom of the tray
Place in a 325' oven and cook for about 35-40 minutes turns the tray ½ way through the cooking process
Cook until set – Careful not to overcook
Dijon Bechamel Ingredients:
6 Cherry Tomatoes halved
1 Cup of Spring Mix Lettuce
3 Tablespoons of Dijon Mustard
1 Dash of Worcestershire Sauce
2 tablespoons butter
2 tablespoons flour
1 1/4 cups milk, heated but not boiled
Salt and Freshly ground Pepper
Instructions:
Melt the butter in a heavy bottom saucepan.
Stir in the flour and cook, stirring constantly until the paste cooks and bubbles a bit.
Careful not to let it brown – About 2 minutes.
Remove from heat and add the Dijon Mustard and Worcestershire Sauce
To plate:
Place a small salad of lettuce leaves in the center of the plate
Flip the souffle out of the ramekin (into your hand with a heat glove)
Gently place the souffle on the lettuce
Spoon the Bechamel Sauce over the top of each souffle
Top each souffle with Cherry Tomato Halves, and a little of the Diced Ham, and a ½ Cup of cooked potatoes
Lightly dust with Smoked Paprika – Enjoy!
