Cedar House Inn's Homemade Banana Bread Royale

Layered with Vanilla Marscapone Cream and Fresh Strawberries, Drizzled with an Espresso and Dark Chocolate Balsamic Reduction


Banana Bread Royale:

1 ½ Cups of All Purpose Flour
1 ½ Cups of Sugar
½ Cup of Chopped Walnuts
2 Over Ripe Bananas – Smashed
2 Large Eggs
½ Cup of Vegetable Oil
¼ Cup plus 1 Tablespoon of Buttermilk
1 teaspoon of Baking Soda
1 Teaspoon of Baking Powder
1 Teaspoon of Salt
1 Teaspoon of Vanilla

Pre-Heat Oven to 350'Combine all ingredients in a large mixing bowl and mix well. Grease a 9×5 inch loaf pan and line with parchment paper (or dust with flour)Transfer batter to the prepared pan. Bake until the top is golden brown and an inserted toothpick comes out clean. Let cool and slice into ½ inch pieces

Toppings:
Philadelphia Whipped Cream Cheese
1 Tablespoon of Vanilla Extract
4 Large Strawberries
1 ripe Banana
½ Cup of Chopped Walnuts
Mix ½ Cup of Philadelphia Cream Cheese with 1 Tablespoon of Vanilla
Spread a Tablespoon of the cream cheese mixture on a slice of the banana bread
Top with a fresh slice of strawberry and slice of banana
Top with another slice of Banana Bread
Add a small dollop of the cream cheese and add another slice of Strawberry
Drizzle with the Dark Chocolate and Espresso Balsamic Vinegar Reduction
Dust with chopped walnuts

Balsamic Vinegar Reduction:
½ Cup of Dark Chocolate Balsamic Vinegar
½ Cup of Espresso Balsamic Vinegar
Place vinegars in a small sauce pan and reduce over medium/low heat until syrup consistency – Careful not to burn – use a spoon to drizzle over the Banana Bread tower.

– 1/3 of the Loaf Serves 4 – The rest will freeze well!
